Sardines wrapped in vine leaves

WHAT?

A few pistachios crushed

Little chilli, 1-2 garlic cloves

Chopped tomato

Pepper/oregano

2-3 tablespoons olive oil

Bunch of parsley

Lemon juice and zest

A few vine leaves

6 sardines



HOW TO?

1️⃣Clean, gut each sardine, remove the central bone carefully and make each sardine to two fillets.

2️⃣Mix the mixture of chilli, tomato, pistachios, garlic and parsley. Add the olive oil, pepper and lemon.

3️⃣Take one of the fillets, add a teaspoon of the mixture and add the other fillet on top. Same process for all sardines.

4️⃣Put them in a flat Tupperware and pour some olive oil, lemon juice, grind pepper and let marinate for at least half hour.

5️⃣Each sardine set wrap with the filling in a vine leaf. Fold one side, then other side and roll the other two sides. Grill for 5 minutes each side.
