Sautéed spinach and yummy eggs

WHAT?

4 eggs

200g. Spinach and other greens (chervil, rocket)

1 spring, 2-3 garlic cloves, chilli - all finely chopped

Dill

4 cherry tomatoes

2 tablespoons of EVOO

Parsley, feta, ½ lemon juice to serve


HOW TO?

1️⃣Sauté the spinach and greens in olive oil for three minutes.

2️⃣Add the spring onion and dill and carry on. Add the chilli and tomatoes and cook for two more minutes.

3️⃣Make 4 holes and break the eggs. Close the lid and cook for 5/6 minutes

4️⃣Turn off the heat, add feta and serve with extra pepper, parsley and lemon juice.
