Simple, delicious eggs

WHAT?

4 eggs

½ red pepper, 1 onion, 2-3 cloves garlic

1 tablespoon of extra virgin olive oil

1 teaspoon of tomato paste (peltes)

100g feta cheese

Little bit of chilli

Paprika, pepper, oregano, salt (if needed), pinch of sugar, ½ lemon juice and zest

Parsley to serve

HOW?

1️⃣Roughly chop onions, garlic and red peppers. Grate pepper and oregano and sauté in the olive oil for 4 minutes.

2️⃣Add the tomato paste, sugar and chilli and cook for 2-3 minutes.

3️⃣Make four holes and add the eggs. Put the lid on and cook for 4-5 minutes. Add the feta and the parsley and let it wilt. Add paprika and lemon juice/zest. Serve with a teaspoon of Greek yoghurt.
