The most delicious eggs with artichokes and apaki meat

WHAT?

4 eggs

3-4 Jerusalem artichokes - cleaned, sliced and pre-boiled for 6 minutes in water

1 onion

3 garlic cloves

Sliced apaki meat (smoked Greek meat)

Fennel chopped

2 tablespoons extra virgin olive oil @ladi_biosas

Pepper, salt, thyme ½ lemon

HOW TO? 1️⃣In olive oil, sauté onion, garlic, fennel, ground pepper for 3 minutes. 2️⃣Add the pre-boiled artichokes and cook until brown for 4-5 minutes. Cook the meat for 4-5 minutes. 3️⃣Break the eggs, add the cover and cook for 5-6 minutes 4️⃣Serve with lemon and thyme.
