WHAT? 150g. lentils
2 bay leaves
1 chopped onion
A few cloves of garlic, chilli
1 teaspoon of honey
1 teaspoon of extra virgin olive oil
4 small to medium tomatoes chopped
Chopped fresh herbs (mint, parsley)
1 chopped carrot
½ chopped pepper
1 tin of tuna
A few (5-6) olives
For the sauce
2-3 tablespoons extra virgin olive oil
2-3 teaspoons red wine vinegar
1 teaspoon mustard
½ teaspoon of honey
Pinch of salt
Freshly ground pepper
HOW TO?
1️⃣Cook the lentils in boiling water for 15 minutes with 2 bay leaves.
2️⃣Add the chopped onion and garlic in pan with 1 teaspoon of olive oil. Sweat in medium heat for 2 minutes. Add the cubed carrot, tomato. Add the chilli, honey and caramelise.
3️⃣Add the salmon and cook for 3 minutes each side.
4️⃣In a bowl whisk the sauce ingredients well. Mix in lentils, herbs, tomatoes, carrot, pepper and chilli.
5️⃣Add tuna to the top. Serve with olive oil and pepper.
