WHAT?
½ watermelon without the seeds and in chunks
Bunch of leaves
100g. Feta cheese
60g. Sygklino meat from Mani (or other cured meat)
1 small cucumber
½ onion, 2-3 cloves of garlic, chilli
Bunch of chopped parsley
A few olives
Bunch of chopped mint
3 tablespoons olive oil
Handful of cashew nuts
Pepper
HOW TO?
1️⃣In a pan sauté the onion, chilli and garlic in the olive oil for two minutes.
2️⃣Cut the watermelon in chunks and mix with leaves in bowl.
3️⃣Crisp the meat and let cool. Toss all ingredients in salad.
4️⃣Add olive oil and balsamic and season.
