WHAT?
100g. Wild rocket
4-5 cherry tomatoes chopped
1 spring onion
A few wild garlic leaves - all chopped
2 hard boiled eggs
6 olives
15 capers
1 boiled potato chopped
Little bit of chilli
Fresh basil For the sauce
1 tablespoon of red wine vinegar
2-3 tablespoons of extra virgin olive oil
1 teaspoon mustard
½ teaspoon honey
Salt, pepper, oregano HOW TO? 1️⃣Boil the eggs in water for 7-8 minutes. 2️⃣Chop the potato in a bowl, add the tomatoes. Add the spring onion and garlic cloves. 3️⃣Add olives, capers, chilli. Cut the egg in quarters and mix lightly in the salad.
4️⃣Chop the basil.
5️⃣Mix all the sauce ingredients and pour over the salad.
